I have real problems with lean pork — pork tenderloin is almost
impossible for me to eat unless I dip each bite-sized piece into
barbecue sauce.
That’s my experience. I find that thighs are better than breasts and
that stewing is the best cooking method. I buy boneless, skinless
thighs (Costco) and stew them in salsa or make murgh masala or
something along those lines so that the chicken is moist and there’s
a low-fat sauce for it.
